I've been crazy about snacking on oranges, olives & cheese lately so here is my winter version of tabbouleh made with bulgar, blood oranges, green olives, parsley, cilantro & green onion. Mint would be great too. Sprinkled with pumpkin seeds & goat cheese. The dressing is made with juice from the blood oranges, brine from the olives, squeeze of lemon, maple syrup & EVOO.
