There is nothing better than the crunch and the sweetness of a carrot just dug from the ground. Digging for carrots is one of the kids' favorite things to harvest at our local CSA...purple, yellow and red varieties are always preferred. Carrots are so versatile, served cooked or raw, hot or cold, whole or chopped, sweet or savory, side dish or star ingredient...see below the options are limitless.
