Cultivated in South America for well over five thousand years, the potato is truly one of the world’s most important vegetables. Discovered by Spanish explorers in the 16th century, it was quickly adopted and is now one of the most ubiquitous ingredients in cuisines around the world.
Ask anyone anywhere to list their favourite foods, and you can bet the potato will feature. Chips, fries, crisps, wedges, mash, my favourite Bombay potatoes… imagine the loss had the Spanish not stumbled on the New World!
