Mustard & Feta Dressing takes this Potato Salad to a whole new level. The spicy, creamy dressing transforms traditional potato salad to a dish that is bursting with flavor. 

To make this recipe, potatoes are boiled then served with chopped veggies, herbs, and sprinkled with capers. The dressing comes together in the food processor.

Feta & Mustard Dressing

ingredients

  • 3 garlic cloves
  • Handful dill & mint leaves
  • 100 grams feta cheese, cubed
  • Juice of ½ lemon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1/4 cup water

Potato Salad

ingredients

  • 1 pound baby golden potatoes, boiled in a salty water until ready to eat
  • 4 celery sticks, finely chopped
  • 2 scallions, finely chopped
  • Handful chopped parsley
  • Handful chopped celery leaves
  • 1 teaspoon capers
  • 1 teaspoon sumac

For the dressing

Method

  • Step 1

    Put all the ingredients in a small food processor and process it to a smooth dressing.

For the salad

  • Step 1

    Put the cooked potatoes in a bowl.

  • Step 2

    Add the chopped veggies, capers and sumac.

  • Step 3

    Pour the dressing and mix it all well.
