Chickpea Salad Sandwich
This chickpea salad sandwich with hearts of palm is one of my favorites. Packed with protein and fiber, and with no cooking involved, it is perfect for powering up when you are short on time. Delicious comfort food at its best. Though it is easy enough to make on a whim, the recipe will make enough for several hefty sandwiches to so that you can store it in the fridge for a quick take-away lunch option, for snacking on as a dip or using it as a topping for salads.
Pasta With Butternut Squash Cashew Sauce
thick...creamy...cheesy and slightly sweet... and dairy free! it also doubles as a delicious dip for cooked broccoli and carrots! think fondue..without the belly ache. pictured here with @eatbanza cavatappi pasta and some baby kale! i dont soak my cashews because (#reallife who got time for that) but you can if you want to! recipe: 1/3 cup roasted butternut squash 1/3 cup raw unsalted cashews 2 TBSP olive oil 1/4 tsp salt Juice of 1/4 lemon 1 TBSP nutritional yeast 1/4 cup filtered water (or more depending on how #Thiq you want it) Cracked fresh pepper to taste Blend all dry ingredients in a @vitamix for 30 seconds. slowly add in the water, then blend few minutes til creamy on high. i dare you not to lick the spoon.
