We love potatoes in many forms from french fries to mashed potatoes, but there is something truly special about the combination of cheese and potatoes when fried. Serve these cheesy potato bites with your favorite dip, or even with some homemade marinara.

ingredients

  • 750 grams or 1½ pounds white potatoes, peeled and chopped
  • 3 tablespoons cornstarch
  • 1 teaspoon smokey paprika
  • Salt, to taste
  • 150 grams hard mozzarella, chopped into cubes
  • 200 ml corn oil, or neutral oil for frying

Method

  • Step 1

    Boil the chopped potatoes along with a bit of salt until they’ve fully softened. Drain and place in a bowl.

  • Step 2

    Add the corn flour, seasonings, oil and mash until smooth.

  • Step 3

    Take a tbsp of the mash, flatten in the palm of your hands and make a hole in the middle to place the cube of cheese. Carefully mould to form a potato ball, ensuring to cover the cheese cube with potato mash. Repeat this process with the rest of the mash and cheese.

  • Step 4

    Heat up the oil in a large frying pan over a medium heat. After 2 minutes or so, carefully place the potato balls. Fry them on all sides for 2-3 minutes each until they’re golden and crispy (the total cooking time is approximately 12 minutes).

  • Step 5

    Remove the balls from the frying pan and leave them to soak on some kitchen roll, to remove the excess oil. Then place in a bowl to enjoy!
