ingredients

  • 1 sheet puff pastry, thawed
  • 1/3 cup pesto
  • 1 cup goat cheese
  • 1/3 cup shredded gruyere cheese
  • 1 bunch asparagus
  • pinch or two flaky salt
  • 1 egg, beaten
  • zest of a lemon

Method

  • Step 1

    Preheat oven to 400°. Arrange asparagus on a baking sheet and drizzle with olive oil. Roast in the oven for about 5 minutes until slightly softened.

  • Step 2

    Lay out the puff pastry on a parchment lined baking sheet and spread goat cheese on top, then top that with pesto and shredded gruyere.

  • Step 3

    Arrange asparagus spears on top (alternating directions) and top with lemon zest. Brush the edges with egg wash and sprinkle everything with flake salt. Bake for about 15-20 min until golden brown.
