Easter Recipes

Easter Sunday is the first big family gathering of the year in my house. Spring is finally in the air. The girls cross their fingers that the weather will permit Easter dresses. The dining table is long and set with pastel green dishes, tulips and napkin holders in the shape of rabbit’s ears. The menu is fresh and light: shrimp cocktail; a mixed greens salad of strawberries, goat cheese and walnuts; mushrooms stuffed with breadcrumb and parmesan; a spiral ham glazed with warm cinnamon and honey. There’s a lemon cake studded with big blueberries cooling on the counter. We have all just come from church, where we now gather at this very table and say grace for the bread, the wine and all it represents to us. There is freedom and joy in Easter Sunday. It is my favorite first day of the week of the year. It’s a chance to be made brand new, as you break bread and drink wine surrounded by the ones you love.
