Cucumbers are 95% water, making these legumes a wonderful way to stay hydrated. Thus the term, "Cool as a cucumber." For hors d'oeuvres, I usually opt for them as a healthy & refreshing alternative to crackers. But you can add them to salads, pastas, water or just about anything. Whether sliced, diced or spiraled, they add a pop of color to any spring or summer dish with little effort.
