These zucchini fritters were one of the first appetizers I ever learned how to make when I started making most of my meals at home. They were a milestone in the early stages of my health journey. I was so pleased with the way they turned out that I started making them on a regular basis. Over the last couple of years, I’ve tweaked the recipe so many times to get these fritters to the point where I love them the most. They're simple, easy, and made from delicious whole ingredients. The spinach avocado dip is a new addition to the recipe and one I’ve been enjoying a lot lately. Happy Holi, my friends! Holi is a spring festival celebrated in India and Nepal - it's also known as the Festival of Colors or the festival of sharing love. It's one of the biggest festivals celebrated in India. The Holi festival traditionally celebrates the victory of good over evil. Growing up, we would always make kheer (an Indian rice pudding) on Holi. I made some today using almond milk and topped it with some homemade granola + toasted sesame seeds + dark chocolate.
