VEGAN ZUCCHINI FRITTERS + SPINACH AVOCADO DIP || I'm so excited to share these delicious vegan zucchini fritters and spinach avocado dip I made in collaboration with vegan certified @bestfoodsmayonnaise Vegan Dressing and @theFeedFeed to celebrate #WorldVeganDay!
These zucchini fritters were one of the first appetizers I ever learned how to make when I started making most of my meals at home. They were a milestone in the early stages of my health journey. I was so pleased with the way they turned out that I started making them on a regular basis. Over the last couple of years, I’ve tweaked the recipe so many times to get these fritters to the point where I love them the most. They're simple, easy, and made from delicious whole ingredients. The spinach avocado dip is a new addition to the recipe and one I’ve been enjoying a lot lately. The Vegan Dressing is the perfect base for this creamy, whipped dip, and goes perfectly with the zucchini fritters.

Spring Avocado Salad ☀️❤🍃🙌🏻 || Spring is finally here and I couldn't be happier - it's been a long few rainy, dark, cold months in Seattle so I'm excited for the sunny days ahead! 💃🎉 This simple salad is all about the new season. Packed with all the veggies, this bowl always fuels me up for the rest of the day. Make it: baby spinach + arugula + forbidden rice + avocado + steamed green peas + cucumber slices + carrot + purple cabbage + cilantro + a wedge of lemon + sesame seeds. Dressing was made from olive oil + lemon + pink Himalayan salt + cracked black pepper. Have a great week, everyone! 😘
