I guess mermaid toast is officially a thing if @foodandwine did a feature on it... what!? Beyond flattered...the name sticks for this aquatic creation. It has been alllll about the bowls this week: massaged kale (chopped red kale massaged with olive oil + pink salt + coconut vinegar + lemon juice) + radishes (always) + dukkah + steamed sweet potato (got a steamer and I'm real excited about it) + yogurt sauce + everything avocado (always part 2) + cucumber + pumpkin & chia seeds. PS: (don't know if anyone's read this far but if you have..) I am branching out (new year new me ✨) and writing up a post with some photo & styling tips since I'm often asked for them. I went with mostly squares and two bars...because when you can't choose between two options, choose both. That's the real takeaway lesson today.

No. 1 favorite easy lunch: falafel spiced chickpeas (aka the stuff you'd made a falafel with, deconstructed... ) So throw a can of chickpeas in a pot with some olive oil, diced onion, cilantro, parsley, cumin, coriander, & mint. I added some spinach leaves to wilt with the chickpeas, then topped with pickled onions, more herbs, olives, pepperoncini, almond milk cheese or feta, cucumbers, tomatoes , sprouts, radishes. This bowl is a freestyle lunch though, top the chickpeas with whatever vegetables your heart desires.
