Italian food is comfort food. It's fresh pasta and and rustic tarts still warm from the oven. It's recipes passed down from generation to generation. No one, you see, does home cooking quite like Italy. When I think of my favourite Italian dishes, they are exquisite in their simplicity. They're seasonal and fresh, not because it's fashionable, but because Italy has a way of eating born from local produce and market stalls, a style of cooking that is nostalgic, convivial, and always delicious.

Risotto Alla Milanese With Pan Roasted Butternut Squash And Sage

Risotto alla Milanese with pan roasted butternut squash and sage. I am so excited to partner with @Ballarini_USA and @TheFeedFeed to introduce this high-performance Ballarini nonstick frying pan with Thermopoint, now available in the United States, as of October 15th. Thermopoint's sensor dot, located on the handle, is green when the pan is cool, and turns red when the pan reaches the perfect cooking temperature. This feature means no more guesswork while cooking! I was inspired by the region of Lombardy, the home of Ballarini, to make this region's most famous dish, Risotto alla Milanese. According to legend, Risotto alla Milanese (in the style of Milan), was created in 1574, when an apprentice glazier, who used saffron to stain glass gold in Milan's cathedral, put saffron in pots of risotto as a joke at a wedding, turning it golden, much to the delight of the guests. Looking out at the fall leaves, I wanted this golden creamy risotto dish to capture all the colors of the season, so, I topped it with green sage leaves crisped in brown butter, and caramelized pieces of orange hued butternut squash. The squash cooked to a beautiful color in this pan and effortlessly slid out due to the superior nonstick finish. Hey, friends, I’m partnering with @thefeedfeed and @ballarini_usa to create a simple yet delicious dish inspired by this beautiful region—Pasta Margherita! A few years ago, my husband and I had the pleasure of traveling to Italy. Although we visited several cities, the Amalfi Coast area was my most favorite! Part of the Campania region with Naples as the capital, this area of Italy is known for juicy San Marzano tomatoes and the famous Pizza Margherita! This Italian-made pan contains a Thermopoint indicator on the handle which turns red when the pan is hot and ready to use. It made cooking this homemade marinara sauce super easy! I then tossed in al-dente pasta, chunks of mozzarella and fresh basil, cooking a little longer just until the cheese melts—So good, you guys! Autumn Inspired Panzanella Salad

I am so excited to get the opportunity to partner with @ballarini_usa and @thefeedfeed with this beautiful, heavy duty pan from Ballarini, to make my Autumn Panzanella Salad! The pan has a unique feature where the indicator turns red, when it is ready, and you can sauté your food within minutes, because of it's ability to heat the pan evenly for faster, even cooking! The Panzanella salad is from the Tuscan region of Italy and originally consists of stale bread and tomatoes, onions, basil, oil and vinegar. My take on this salad is a gorgeous autumn inspired panzanella salad with oven crusted bread, oven roasted delicata squash, green and red apples, pomegranate seeds, brussels sprouts, salted maple pumpkin seeds, herbed goat cheese, crispy sage drizzled with an apple cider-maple-garlic vinaigrette. With the bread and squash in the oven, I was able to get the brussels sprouts sautéed in the pan within a couple of minutes, roast the salted maple pumpkin seeds within a minute, and fry the sage within a minute as well, toss it all together in a large bowl and your salad is good to go! Absolutely delicious taste of all the fall flavors in one bowl! A must make this season!

We partnered with @thefeedfeed and @ballarini_usa to create a delicious garlicky appetizer using their their new pan, which has a heat sensor in the handle so you immediately know when it is hot. This popular Italian dish is simplicity at its best. Whole cloves of fresh garlic are slowly simmered in olive oil until soft and buttery. We add a few sprigs of rosemary and some kalamata olives for extra flavor, but feel free to get creative with other herbs and seasonings if you’d like. Spread onto a slice of crusty baguette topped with minced parsley and a pinch of flaky sea salt, garlic-lovers will swoon from the very first bite. Mints not included. #ballarini #feedfeed
