A Note From Minna Lee

Ancient grains pack a punch of nutrients, and what better place to add even more of that than a salad? Playing around with grains in salads always result in a hearty bowl of fun textures and flavors. Try the classics like amaranth, freekeh, and bulgur or lesser known grains like sorghum, kañiwa and einkorn- some gluten free and some not, there's a place for whole grains in everyones salads.

Asparagus, Peas, Edamame And Freekeh Salad

Freekeh has been waiting a couple of thousand years for its moment in the spotlight, and it’s finally arrived. I'm currently grooving on this ancient grain (ancient as in it hasn’t been altered and hybridized in labs over the years like modern wheat and corn) as my new go-to healthy carb. Nutty and slightly chewy, this grain have an amazing flavor and texture. L-O-V-E it! So here's a simple salad with spring's very own star, asparagus and oh-so-tasty young peas and edamame. So heathy and yummy, eat it and feel awesome!
