Summer (LEMON LOAF) Lovin'. Gluten free, dairy free Glazed Lemon Loaf. I first made this lemon loaf several months ago, and it quickly became a fan favorite. It's moist, light, not too sweet and has a burst of lemon!. Recipe from my friend Jennifer @livingfreelyglutenfree, it is super easy, using only a few simple ingredients including coconut oil and dairy-free yogurt (I used @kitehillfoods vanilla). It's a healthier, but no less decadent, version of the Starbucks one I so fondly l remember sharing with my son before he was diagnosed celiac.

ZUCCHINI MUFFINS for days!. . Our favorite zucchini bread recipe makes two loaves, which is already a bonus, but this time we tried making half of them as muffins and this happened 🙌🏻. . This family recipe is a fan favorite. Whether as a bread loaf or muffins, they are moist, not too sweet and really yummy. Even people who# say they don't like zucchini, love it!. . As for muffins versus bread, apparently people have preferences, or at least my family does. My son prefers a slice of zucchini bread, my husband prefers muffins any day, and I like them both 🙊. Herbed Ricotta And Asparagus Puff Pastry Tart
Peter Rabbit's Picks! Super easy #Glutenfree Asparagus Tart with Herbed Ricotta.. . Recipe adapted from @cookinglight, I used @geefreefoods Gluten-free Puff Pastry sheets (thanks @jackieourman for the inspo!) and pressed them into a pastry pan. Add in the parsley and thyme herbed ricotta, top with asparagus and bake....that's it!. . It looks & tastes incredible and can be cut into tiny pieces as an appetizer for Easter, a brunch or any party. I haven't tried this with @kitehillfoods dairy-free ricotta but I bet it would be great! Let me know if anyone tries it.. . This is the first in a series of Spring menu ideas I'll be sharing over the next two weeks along with our usual eats. If you've been following me for a while, you know that both my husband and I come from big Italian families with lots of food traditions. Easter is the one holiday where we don't have any traditions. Gluten Free Stuffing
HELLOOOO Gluten Free Stuffing! This stuffing is life changing. Ok, maybe that's a little dramatic but if you need to eat Gluten-free, the holidays can be tricky for many people. Being able to enjoy traditional holiday favorites can be a really big deal and trust me, everyone at the table will be raving about this dish!. The key is starting with a great baguette and toasting it. We used baguettes from @everybodyeatsnyc, cubed and baked at 200° for about 40 minutes to dehydrate it. So you start with really crispy but not rock-hard bread. It's mixed with sautéed onions, celery, garlic & optional other veggies, chicken or veggie broth, and plenty of parsley and sage, then baked. That's it!. This recipe is from a longtime friend, herself a total foodie and fellow mom of a celiac child. For years her family made 2 stuffings at Thanksgiving- 1 gluten-free, 1 not. These tacos celebrate the end of season corn and are crazy easy to make! Corn Salsa recipe adapted from @cookinglight , it's corn, red onion, jalapeños, cilantro, lime juice and lime zest. It is fresh, citrusy, and has just a little zing! I actually loved it straight from the bowl with chips 😋🤷‍♀️.. . Served with grilled shrimp (lightly seasoned with EVOO, lime juice, chili powder & cumin), some red cabbage, avocado and a squeeze of fresh lime juice, you have an easy and delicious dinner.. . It was a gorgeous summer day but we are back-to-school tomorrow, so we are all about the comfort food tonight. ☝️ A healthier twist on the classic, this sauce is creamy and indulgent tasting yet made without any cream or butter.. . The creaminess comes from silken tofu. Yep, I said tofu. But don't get freaked out, no one would ever guess! The tofu is blended with the vodka, then mixed into a tomato sauce base, so it's super rich and creamy... and so yummy!
