  • 1 bag Alexia Roasted & Ready Baby Sunrise Potatoes
  • 1/4 cup low-fat American cheese, shredded
  • 1 slice of turkey bacon, cooked until crisp and crumbled
  • 1/8 cup broccolli, cut into very small florets
  • 1/8 cup shredded mozzarella cheese
  • 4-6 slices turkey pepperoni
  • Fresh chives and basil, for garnishing

Method

  • Step 1

    Preheat oven to 425Fdegrees.

  • Step 2

    Line a 11” x 17” baking sheet with parchment paper, spread potatoes onto the sheet and bake for 22 minutes, turning halfway through.

  • Step 3

    Remove baking sheet from oven and using the bottom of a glass, press potatoes flat.

  • Step 4

    Top 1/3rd smashed potatoes with a sprinkle of low-fat shredded American cheese, dividing crumbled turkey bacon evenly between them.

  • Step 5

    Top 1/3rd smashed potatoes with a sprinkle of low-fat shredded American cheese, dividing broccoli florets evenly between them.

  • Step 6

    Top 1/3rd smashed potatoes with a sprinkle of mozzarella cheese and one slice of turkey pepperoni each.

  • Step 7

    Return potatoes to oven and bake until cheese is melted, about 5 minutes.

  • Step 8

    Remove from oven and garnish with chopped chives and basil.
