Our last cook club of 2016... and the last time I say: I'm not going to eat any kulfi, and then totally eat all the kulfi. It's been an amazing first year for our crazy little idea, we've had so much fun and met so many great people, and we are planning on cooking up an even bigger storm in 2017.

Mum's gur papdi, a sweet made with ghee, atta, nuts and jaggery, a recipe from many grandmothers past. Simple food with the magic to transport you through time and space, to where you began, to make you feel good, and safe, no matter what. Love is the secret ingredient here, passed down through generations, the powerful force we stir into the food we cook at home for the people we care about most. If only mums could rule the world

When I think of my family in Bombay, I think of these spicy mince cutlets, such a traditional East Indian dish. My great grandmother would have cooked them for my great grandfather from a recipe passed down to her, and it has continued to be passed down since x #spicemama #india #indian #indianfood #traditional #nostalgia #homecooked #recipes #gloobyfood #feedfeed #f52grams #eater #foodvsco #vscofood #foodpics #food #perthfood #perthfoodie #perthsmallbusiness #perthblogger #tasty #dinner #yummy #snacks #makeitdelicious #wherewomencook

Recipe:

To roast the pumpkin:

400-500 grams (about 3 cups) pumpkin, peeled and cubed
1 tablespoon oil
1/2 teaspoon salt
1/2 teaspoon turmeric
1/2 whole cumin seeds (optional)

Coat the pumpkin with oil, salt and turmeric and roast for 20 minutes in an oven heated to 200 degrees C (400 degrees F). Leave to cool.

For the curry:

3 tablespoons of oil
1 red onion, finely chopped or grated
1 tablespoon of ginger, finely grated
1 tablespoon of bombay bottle masala
1 green chili
1 stalk of curry leaves (optional)
1 can of coconut milk - I use Ayam brand
1/2 teaspoon salt
1 teaspoon sugar
1 heaping teaspoon tamarind paste
1 tablespoon tomato paste

To cook the curry, heat oil in a heavy bottomed pan and fry onion for around 10 minutes, before adding the green chili, curry leaves (if you have them), ginger and lastly the bottle masala. Keep cooking for a few minutes, adding a splash or two of water if it starts to stick.

When the onions are lovely and caramelized, slowly add coconut milk to taste – you can add the whole can or half a can plus half a can of water or stock depending on your preference.

Add salt, sugar and tamarind, and simmer for around 15 more minutes. Then add the pumpkin, a tablespoon of tomato paste and stir, cooking for a further few minutes.

Taste for seasoning and toss in a large handful of fresh baby spinach leaves to serve.

We sometimes get things 'slightly' wrong in our enthusiastic approach to cooking, failure to measure anything and tendency to randomly 'chuck stuff in'. Like mistakenly adding an extra habenero chilli or two to our Bombay potatoes at cook club last night and nearly having to hose down our poor guests. Ah well, I of course still think they're delicious and am persisting with the leftovers for lunch ... though I think I might already be seeing stars... 🌶🌶🌶 #spicemama #bombaycookclub #indian #indianfood #food #heresmyfood #indianfoodbloggers #perthfood #perthfoodie #feedfeed #f52grams #saveur #eattheworld #huffposttaste #homecooking #comfortfood #bombay #potato #eattherainbow #gloobyfood
