A Note From Claire Matern

Growing up with a cheesemonger for a dad meant that grilled cheese sandwiches were made with extra sharp Cheddar, aged Gruyere or Comte, or melty Emmental. If I wanted a good ol’ American classic I had to hide the singles in the back of the fridge. It was form of dairy rebellion. And even though I still do it on occasion as a little treat, in my adult years I now realize how incredible those childhood sandwiches were. The grilled cheese sandwich was also one of the first things I learned to make, using either one of Dad’s well-loved skillets or my great-grandmother’s long-handled sandwich press. The grilled cheese sandwich is one of those meals that follows us all from growing up into adulthood. They are a perfect weekend lunch or simple midweek supper; that bite of comfort and familiarity. And now it’s fun to experiment with different cheeses, breads (a cranberry walnut loaf with Cheddar and chutney is a new favorite of mine,) and additions: pesto, bacon, caramelized onions and jam just to name a few. Here are some other ideas to get you started...

Naming this one the CuBAOno™: Yucatán-style roasted pork (cochinita pibil), honey ham, Swiss and Oaxacan cheeses, pickles and jalapeno mustard on a steamed BBQ pork bun (char siu bao) that was cut in half, stuffed and then pressed on the cast iron like a grilled cheese. It's that Cuban-Mexican-Chinese fusion-y sandwich that you never knew you needed (or existed) until now.

I can't resist a pun...especially a cheesy one (!) and the fusion of a classic Cuban sandwich, a Chinese BBQ pork bun, and jalapeños and Oaxacan cheese to bring a Mexican flavor to it all sounds too good to be true.

IMHO, kale is pretty gross when eating raw, and if you bake it the flavor isn't all that spectacular…

Gouda, Kale And Avocado Egg Sandwich

IMHO, kale is pretty gross when eating raw, and if you bake it the flavor isn't all that spectacular either... So a nice method to retain relative crunchiness and elasticity (?!? pardon my limited veggie vocab): Toss raw kale in olive oil, balsamic, salt & pepper. Then grill it on a grill pan until slightly charred. Sprinkle on furikake (that crispy umami-bomb Japanese rice topping), and be seriously rewarded... Of course it doesn't just end there. Turn it into a green sandwich with avocado, sprouts, Gouda (or other suitable sandwich cheeses), egg, cucumber and mayo. Wrap in foil and bake till the cheese melts...you're welcome
