A Note From Claire Matern

Growing up with a cheesemonger for a dad meant that grilled cheese sandwiches were made with extra sharp Cheddar, aged Gruyere or Comte, or melty Emmental. If I wanted a good ol’ American classic I had to hide the singles in the back of the fridge. It was form of dairy rebellion. And even though I still do it on occasion as a little treat, in my adult years I now realize how incredible those childhood sandwiches were. The grilled cheese sandwich was also one of the first things I learned to make, using either one of Dad’s well-loved skillets or my great-grandmother’s long-handled sandwich press. The grilled cheese sandwich is one of those meals that follows us all from growing up into adulthood. They are a perfect weekend lunch or simple midweek supper; that bite of comfort and familiarity. And now it’s fun to experiment with different cheeses, breads (a cranberry walnut loaf with Cheddar and chutney is a new favorite of mine,) and additions: pesto, bacon, caramelized onions and jam just to name a few. Italian Herb Rubbed Fontina Olive And Artichoke Grilled Cheese

Happy #nationalgrilledcheeseday To celebrate I made an extra melty sandwich with salty chopped olives and marinated artichokes. And I made my own panini press with the weight of a skillet and some cans of tuna (pro tip) I used fontina, a perfect cheese for an extra melty sandwich. This one was rubbed with a mix of Italian herbs, which went perfectly with the olives and artichoke for my Mediterranean inspired grilled cheese. I learned much more about the European style cheeses @yellowdoorcreamery is making when I visited them in Wisconsin. They’ve partnered with the master cheese makers from the National Dairy School ENIL (um..can I go there?) in Mamirolle France (seriously, can I go there?) to introduce centuries-old cheese making techniques here in the US. It was awesome to see their process from curd to aging room for their new Alpine cheeses that will be introduced later this year.

I was inspired by the Tuscan herbs rubbed on the fontina to pair it with salty chopped olives and marinated artichokes. Fontina is a perfect melting cheese for sandwiches. it's buttery, mild, and rubbed with the spices added so much to the sandwich. I was tempted to spread some olive tapenade too--that will have to be next time!
