Avocado and Mozzarella Grilled Cheese Sandwich

ingredients
- 2 slices gluten free or whole grain bread
- 2 slices part skim mozzarella
- 1/2 avocado, sliced
- 2 tablespoons butter
- To Taste salt
Method
Step 1
Heat a medium sized skillet on medium/high heat.
Step 2
Place both slices of mozzarella on one slice of bread.
Step 3
Sprinkle salt over the avocado slices. You may add other seasonings such as red pepper flakes or black pepper, as desired. Place sliced and seasoned avocado on the remaining slice of bread.
Step 4
Place both slices of bread together making a sandwich, so that the avocado and mozzarella are together inside.
Step 5
Add 1 tablespoon of butter to the heated skillet. Once the butter has melted and begins to bubble, place the sandwich on the buttered skillet, cheese side down.
Step 6
Cook for 3-4 minutes or until bread is crispy, golden brown and cheese has melted. (If the cheese has not melted, cover the sandwich with a lid to trap heat).
Step 7
Remove sandwich from skillet with a spatula, and the add remaining tablespoon of butter to skillet. Once the butter has melted, place sandwich back onto the skillet, uncooked side down.
Step 8
Cook for 3 minutes, or until bread is crispy, and golden brown. Remove sandwich from skillet with a spatula. Cut sandwich into halves or as desired and serve immediately.
