These cookies are sure to put a spring in your step. Dairy-free sugar cookies are topped with edible flowers for a pretty pop of color. This recipe uses pansies, rosemary flowers, and rose petals.

ingredients
- 250 all purpose flour
- 1 stick butter/vegan butter
- 110 grams sugar
- pinch of salt
- 1 teaspoon vanilla bean paste
- Lemon zest
- 2 eggs, yolks only
- Edible flowers to decorate
Method
Step 1
Place butter, sugar, salt, vanilla and lemon zest in a stand mixer fitted with paddle attachment.
Step 2
Mix until well combined.
Step 3
Add egg yolks and mix to combine. Add flour and mix until smooth. Transfer to a clean surface and shape dough into a disc. Wrap dough and refrigerate for at least 30 min.
Step 4
Preheat oven to 170C degrees.
Step 5
Roll out dough to 8mm and use a cookie cutter to make cookies. Use some water or egg white to stick edible flowers on the cookies.
Step 6
Bake for 15 minutes.
