  • 1 peach, pitted and sliced
  • 2 tablespoons honey
  • 6 sprigs fresh thyme
  • 4 tablespoons unsalted butter
  • 4 slices Italian bread
  • 1 cup shredded Asiago Fresco PDO
  • 4 slices prosciutto

Method

  • Step 1

    Spread peach slices out onto a small plate. Drizzle with honey, sprinkle with leaves from the fresh thyme sprigs, and set aside.

  • Step 2

    Set a skillet over medium heat. Spread one tablespoon of butter across one side of bread. Lay the bread, buttered side down, in the hot pan.

  • Step 3

    Sprinkle ¼ cup of shredded Asiago Fresco PDO on top of the bread, followed by two slices of prosciutto, 5-6 peach slices, and another ¼ cup of shredded Asiago Fresco DOP.

  • Step 4

    Top the last layer of cheese with a second slice of bread, buttered side up. Cook for 2-3 minutes until the bottom bread is golden brown and crispy. Carefully flip, and cook another 1-2 minutes.

  • Step 5

    Repeat with remaining ingredients for a second grilled cheese. Transfer both sandwiches to a cutting board and slice in half. Enjoy!
