ingredients
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- salt and pepper, to taste
- 1 tablespoon mayonnaise
- 1 tablespoon dijon mustard
- 2 slices sourdough bread
- 6 ounces Piave PDO, grated
- 4 tablespoons unsalted butter
- fresh oregano or thyme, for garnish
Method
Step 1
Add sliced onions and olive oil to a pan over medium low heat. Continue to stir the onions until soft and browned, about 45 minutes. Add more oil or butter as needed to prevent the onions from getting too dry. Season with salt and pepper and set aside.
Step 2
Prepare your grilled cheese by adding the mayonnaise and dijon mustard to the bread. Layer the caramelized onions, grated Piave PDO cheese and close the sandwich.
Step 3
Heat a pan with 2 tablespoons butter over medium heat. Add your sandwich and cook until the bottom side is browned. Adjust the heat as needed to avoid burning the bread. When the bottom has browned, use a spatula and flip the bread over to the other side to continue cooking. Add the remaining butter and continue to brown the bread. Note: If both sides of the bread brown before the cheese has a chance to melt, add a few tablespoons of water to the pan and cover it while reducing the heat. The steam will help to melt the cheese.
Step 4
Once both sides of the bread have been browned and the cheese has melted, remove the sandwich from the pan. Slice in half and add fresh herbs to garnish.
