Scrambled Egg and Greens Sandwich

Add ingredients directly to your favorite online grocery cart (where available).
- 1/2 tablespoon oil, or butter
- 2 eggs, beaten
- 2 slices whole grain bread, toasted
- 1/4 avocado, mashed
- 1 tablespoon pesto
- 2 tablespoons shredded cheddar cheese
Heat oil in a small skillet over medium. Pour in eggs and reduce heat to medium-low. Cook, stirring occasionally, until reaches desired doneness.
Spread avocado and pesto on bread. Top with cheddar, scrambled eggs, and microgreens.
