Fried Egg Pesto Grilled Cheese

  • 1 tablespoon unsalted butter, room temperature
  • 1 tablespoon mayonnaise
  • 4 slices of brioche or sandwich bread
  • 2 eggs, fried over-medium
  • 2 tablespoons pesto
  • 1 1/ 2 cups combination of Colby jack, cheddar, pepper Jack, or Gruyère
  • tomato soup, for serving


  • Step 1

    Mix the butter and mayonnaise together in a small bowl. Spread on one side of each slices of bread. Spread pesto onto the opposite side.

  • Step 2

    Place buttered side down into a greased skillet. Turn heat to medium. Divide cheese between both sides. Place fried egg over cheese. Top with the other slice of bread, buttered side up.

  • Step 3

    Cook until cheese is melted, about 2 minutes per side. Bread should be golden and crispy.

  • Step 4

    Serve hot with tomato soup.
