This batch of granola will make mornings delightful! 🌞 I've adapted the recipe from the lovely Marta @organicfoodforkids so this is #nutfree. I love this recipe because it creates delicious clusters of granola and they're so satisfying! 😍 This also works beautifully in a #lunchbox with yogurt. πŸ‘πŸ»πŸ‘πŸ»πŸ‘πŸ» # Ingredients πŸ”Έ3 cups gluten free oats πŸ”Έ1 very ripe banana πŸ”Έ1 tbsp sunflower seed butter πŸ”Έ3 tbsp melted coconut oil πŸ”Έpinch of salt πŸ”Έ1/2 tsp vanilla bean powder or vanilla extract πŸ”Έ1/2 tsp cinnamon πŸ”Έ1/4 cup dried cacao nibs πŸ”Έ1/4 cup dried coconut πŸ”Έ1/4 cup dried cranberries πŸ”Έ1/4 cup dried mulberries β€’ Instructions βœ…In a large bowl mash banana and mix in sunflower seed butter, coconut oil, cinnamon, salt, and vanilla. Once everything is incorporated, mix in the oats and dried fruit. βœ…Preheat oven to 350F. Today's #camplunch is a mashup of last night's dinner: noodles with a creamy egg sauce with crumbled veggie burger, plus snap peas, plum, cherries and chocolate. ❀️ Noodles with egg is my absolute go-to dinner when I'm short on time. # Here's how: Cook 1 pound of noodles as directed. When they've finished cooking, save 1/2 cup of the cooking liquid and drain the rest. In the same pot on medium low heat, add butter or oil of your choice - I used 2 tablespoons of butter here. Add the cooked noodles back into the pan with the cooking liquid and then add two large eggs plus two egg yolks and salt to taste. Stir continuously until the egg forms a creamy, delicious sauce but watch the heat level so that the eggs don't scramble. (If it happens, its fine. Trust me, it happens to me too). Voila. That's it. Noodles with egg. Fast. Easy.
