A Note From Lena Vergnes

This veggie packed dish is a classic French favorite. Some of the must haves are tomatoes, onions, zucchini, eggplant and bell peppers, but it is open to putting your own spin. Cooked slowly in the oven, the vegetables become soft and sweet with the consistency somewhat like a stew. It's great served over couscous, rice, pasta or on it's own!
