I like to think that eggplants are one of the most underrated ingredients! You can grill 'em, sauté 'em, bake 'em, and stir fry 'em. I mean, come on! It's a true Mediterranean staple. If you've never charred an eggplant to the point of no return and then blitzed up the flesh with a heavy hand of tahini, I'd argue that you've haven't lived yet! Eggplant have the power to soak up so much flavor while still maintaining that 'meaty' texture. Truly magical!
