Baba Ganoush with Crispy Fried Onions Ingredients
Chosen Foods 100% Pure Avocado Oil Spray: This oil spray is perfect for evenly coating your baking sheet without excess oil, thanks to its high smoke point and neutral flavor. It helps prevent sticking and promotes even roasting of the eggplant, ensuring a beautifully caramelized and tender result.
Chosen Foods 100% Pure Avocado Oil: Ideal for frying and sautéing due to its high smoke point, this oil imparts a neutral taste that won't overpower your ingredients. It’s great for making crispy fried onions, as it allows them to crisp up nicely without burning. Its healthy fats also contribute to a more balanced recipe.
Chosen Foods Classic Mayo made with 100% Pure Avocado Oil: This mayo offers
a creamy and delicious flavor that enhances the baba ganoush, it adds richness and a smooth consistency to the dip, and complements its signature smokiness.Eggplant: Globe eggplant is ideal for making baba ganoush due to its classic flavor and texture. Choose a firm, heavy eggplant for roasting to ensure it cooks evenly and achieves a tender texture. If globe eggplant isn't available, you can substitute with Japanese and Chinese eggplants.
Pine Nuts: Toasted pine nuts add a delightful crunch and nutty flavor to the baba ganoush. Lightly toast them to enhance their flavor without burning. If pine nuts are unavailable, try chopped walnuts or slivered almonds for a similar crunch, or sunflower seeds for a nut-free option.
Test Kitchen Notes
Roasting Eggplant: Score the eggplant to ensure even cooking and better texture. Bake cut-side down on parchment for optimal caramelization and a tender interior. This technique prevents the eggplant from becoming too dry or mushy.
Crispy Fried Onions: Cook onions slowly over medium heat, stirring frequently to achieve an even golden-brown color and crispy texture. Allow the onions to drain on paper towels to maintain their crunch, and avoid adding them to the baba ganoush until serving to keep them crisp.
Baba Ganoush Texture: Chop the roasted eggplant into small pieces to prevent long, stringy bits. For a smoother consistency, mash or blend the mixture slightly. The addition of avocado oil mayo adds creaminess without overpowering the eggplant’s flavor.
Garnishing: Place crispy onions in the center of the baba ganoush for a striking presentation. Sprinkle smoked paprika around the edges for a hint of smokiness and contrast. Toasted pine nuts add a delightful crunch and nutty flavor, making the dish visually appealing and texturally interesting.
Serving Suggestions: Serve the baba ganoush with warm pita bread or fresh vegetables for a well-rounded appetizer. The warm pita complements the creamy dip, while fresh vegetables provide a refreshing contrast.

- 1 large yellow onion, halved and sliced ¼” thick
- 1/4 cup Chosen Foods 100% Pure Avocado Oil
- 4 garlic cloves, finely grated
- 1/3 cup Chosen Foods Classic Mayo made with 100% Pure Avocado Oil
- 1 lemon, juiced

To Prepare the Eggplant:
Method
Step 1
Preheat the oven to 400°F.
Step 2
Halve the eggplant vertically down the center. Score each half diagonally in one direction, then diagonally in the opposite direction to create a diamond pattern.
Step 3
Line a baking sheet with parchment paper and generously spray with avocado oil. Sprinkle salt on each eggplant half. Place the eggplant face down on the prepared baking sheet. Bake for about 40 minutes, or until the flesh is tender and the tops are wrinkly.
To Make the Crispy Onions:
Step 1
Meanwhile, heat a medium pan over medium heat and add the avocado oil. Add the onion slices, tossing frequently to separate the layers. Cook, tossing often, until the onions turn golden brown, then deepen to a rich brown, and become crispy. Transfer the onions to a paper towel-lined plate to drain.
To Make the Baba Ganoush:
Step 1
Allow the eggplant to cool slightly, then flip the halves over and scoop out the flesh. Discard the skins. Chop the eggplant pulp into small pieces to avoid long, stringy bits. Transfer the chopped eggplant to a bowl and mix in the mayo, garlic, and fresh lemon juice. Taste and season with salt as needed.
Step 2
Transfer the eggplant mixture to a serving plate. Place the crispy fried onions in the center. Garnish with paprika around the edges and sprinkle pine nuts in between.
Step 3
Serve with warm pita bread and enjoy!
