"I'm so excited to share #MyMuirGlen Ratatouille recipe! I got the opportunity to work with Muir Glen and The Feedfeed to create this recipe for you guys! Ratatouille is a baked vegetable dish in tomato sauce and I added my own twist into the recipe with sliced fresh mozzarella. I used the Muir Glen Fire Roasted Crushed Tomatoes to make the sauce and it was delicious! I’m going to take the leftovers for lunch this week! The recipe is on the blog! All of the ingredients from my local grocery co-op, East End Food Co-op!"

For the Ratatouille

ingredients

  • 1 medium eggplant, cut into rounds
  • 1 zucchini, cut into rounds
  • 6 roma tomatoes, cut into rounds
  • 16 ounce fresh mozzarella, cut into rounds

For the Sauce:

ingredients

  • 1 (28 ounce) can Muir Glen Fire Roasted Crushed Tomatoes
  • 2 tablespoons olive oil
  • 6 cloves garlic, sliced or chopped
  • 1 medium diced yellow onion
  • 1 diced red bell pepper
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon crushed red pepper
  • Salt, as needed
  • Black pepper, as needed

For the Herb Oil:

ingredients

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup chopped basil leaves
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • Salt, as needed
  • Black pepper, as needed

Method

  • Step 1

    Preheat oven to 375˚ F. Warm up cast iron skillet over medium heat.

  • Step 2

    Heat up oil and saute garlic slices until medium brown. Add onions and bell peppers. Sauté until soft, about 5 minutes. Add the crushed tomatoes, red crush pepper, salt and pepper.

  • Step 3

    Let the sauce simmer for about 10 minutes. Remove from heat and mix in the basil. Arrange the sliced veggies and mozzarella over the sauce.

  • Step 4

    Mix the herb oil ingredients together and drizzle on top of the veggies. Bake it in the oven for 60 minutes. Cool and enjoy!
