Roasted Vegetables With Roasted Garlic & Three Herb Chimichurri
I am beyond excited to share this vibrant recipe as a #partner with @Vitamix and @TheFeedFeed! This Roasted Garlic & Three Herb Chimichurri is a flavor packed addition to any meal. It is so easy to blend in the personal cup adapter that this is my third batch this month! It has been essential for my meal prep – one @Vitamix travel cup + spill proof lid is in the fridge, ready for any saucing emergency. It is rich, beautiful, and full of healthy fat and phytonutrients- and I want to be jusssst like it when I grow up.
Rainbow Grilled Vegetables
As a future nutritional therapist I will meet people where they are, and support their individual needs while crowding out processed foods with high quality protein, carbs and fats.
Ahi Tuna Sushi Bowls Over Cauliflower Rice
I win at life with this dish, and I'm not too bashful to say it. Whole30 sushi, at home, that fully satisfies and didn't break my bank. I've craved sushi so much recently, and I am so so so happy.
Plantain Breakfast Nachos
How to make: Crispy green plantains oven baked with coconut oil, fluffy scrambled eggs, sautéed spinach, topped with Kumato tomato, cilantro, green onions, jalapeño AND half an avocado. Carbs, protein, greens and FAT - it's a breakfast fiesta!

Wear your flower crown and eat them too. 🌱🌻🌿🌼The earth gives us life- let's live to return the favor. #cookbycolor #flowerpower # Slice 3 medium Chinese eggplants into 1/4 coins. Mix 2 freshly crushed garlic cloves into 3 Tbsp of olive oil with 1 tsp paprika, 2 tsp of cumin, salt and pepper to taste. Brush both sides of 3 sliced Chinese eggplants with the mixture. Roast them in a single layer at 450- for 10 minutes, flip them, and turn the heat up to broil for a carefully monitored 3-5 minutes until they are browned and soft and delicious. # I top with cilantro, parsley or (my favorite) both but this time I used these gorgeous edible flowers from @earthworker_farm. Always finish with a spritz of fresh lemon. #earthday2017
Nurture and nourish yourself through the beauty in the broth. The brothsicles make this nutrient dense practice a breeze. #cookbycolor #bonebroth # Love my broth everyday- sometimes to sip, sometimes as a little soup. They are wonderful to use to deglaze a pan, or impart flavor on quickly sautéed vegetables. # In my 8 Qt Instant pot- I use 2 pounds of chicken feet, and one whole chicken carcass. 2 carrots, 2 stalks of celery, 1 chopped onion, a handful of dried porcini mushrooms, a Tbsp of fish sauce, about an inch of fresh turmeric, and a whole clove of previously roasted garlic. Cook under pressure for two hours, or overnight. Use a fine mesh strainer- and pour that golden broth into ice cube trays. # Artistic inspiration from good friend @c.r.a.v.i.n.g.s- queen of the dark. Avocado in bone broth originally inspired by @shutthekaleup. # I will always top my broth with cilantro, parsley, or whatever fresh herbs I have. As Jeanette would say- 'it's lit!'
Feeding yourself well is the ultimate act of s e l f c a r e. It's a nourishing practice for you, your body, and can be anywhere on a broad spectrum. # Think: make enough for your next meal. Yes! It can be that simple. # While my clients loooove their fridge packed like this...I prefer to prepare food everyday. I'll cook protein, carb and fat for dinner each night- and have enough to pack us breakfast and lunches for the following day. # It’s all about personal preference. What will make YOU successful? What can I do to help? #cookbycolor #mealprep
