A Note From Abi's Farmhouse Kitchen

Let's be clear: there's never some 100% "Perfect Pairing" between wine & food. Guidelines, yes but perfection is always up to you, your taste buds, nose hairs, mood, and plate. Pairings really can be a gorgeous science, but I'd rather think of them as Art: always fluid and seasonally shifting. Flexible. To me? Wine is the most democratic of drinks. Whores & Queens have both enjoyed Wine for as long fermentation has existed (6,750 years and counting). The truth is, at the end of the day, that "perfect pairing" between plate and glass is what tastes good to you.

Artichokes must be one of my all-time favorite vegetables. But the inner astringency of said vegetable make it a notoriously challenging food for wine pairings. With that in mind, I usually size up the garnish or how the artichoke is made. For instance, a baked artichoke slathered in Italian sauces would go beautifully well with a medium bodied Red wine. But for something as light and elegant as grilled? Stick with a Vermentino, Pinot Grigio or non-grassy Sauvignon Blanc.

Whenever I see elevated levels of spicing and chili in a dish, I immediately think to pair it with a dry, tight Rose. Look for a deeper pink (even ruby) colored Rose. This deeper color signals that the wine spent more time on the red skins of wine grapes before fermentation. Meaning, the Rose has more inner body to stand up to (& dance beautifully with) spicy chilies.

This heart-warming skillet of pure goodness may only be enhanced with Champagne. Look for a dryer sparkling wine produced in the traditional "Method Champenoise." This will pair nicely with this winter Shakshuka for Breakfast or a medium bodied, earthy Pinot Noir for a mid-week dinner.

Grilled Shrimp Tacos really should be their own Food Group. Easy to make. Even easier to Eat. Especially when beautifully paired with a crisp, dry white wine. Personally? I'd opt for a steel-fermented Sauvignon Blanc. The acid in this wine will stand up well with soft fleshy shrimp and warm tortillas.

Remember this: Mushrooms and Pinot Noir are almost always passionate lovers. And baking chanterelle's with brie on pizza? Look for an earthy Pinot Noir (or Rose of Pinot) and enjoy them together. If you can't find a Pinot, perhaps a Merlot or Grenache would go well too.
