pan-seared artichoke with an aioli trio: Happy Valentine’s Day everyone! You know what they say: once you pan-sear an artichoke black, you can never go back. We have always steamed our artichokes, but after discovering this method we realized how much more flavor was possible. Simply dressed with fresh-squeezed lemon juice, whole cloves of garlic, a drizzle of oil, and a pinch of flaky sea salt, they are wrapped in foil and baked in the oven till they come out steaming hot, filling your kitchen with the aroma of roasted garlic. And just as you were thinking it doesn’t get better, it actually does: throwing the artichokes on a grill for a few minutes brings an enticing smokiness that you can’t get from the oven alone. Cold milk and half and half are mixed with brandy, a splash of hazelnut frangelico liqueur, vanilla extract, and a sprinkle of powdered sugar to sweeten things up. Everything is simply mixed in a shaker with ice, poured into a chilled glass, and that’s it. kinda, sorta patatas bravas: We have been hearing so many wonderful things about @turshen’s new cookbook Small Victories, and couldn’t wait to get our hands on a copy. It was difficult to pick what to try first since she tempts us with so many mouthwatering choices. Our hearts were immediately drawn to the spicy Spanish dish that we fell in love with while visiting family in Bilbao, and we were intrigued by the clever title. In this easy recipe, bite-size fingerling potatoes are simmered until tender, then tossed in a hot skillet with spicy smoked paprika and a pinch of salt before roasting in the oven, turning deeply browned and extra crispy. These perfectly cooked potatoes are then topped with a spicy homemade mayo made with minced garlic, smoked paprika, tangy red wine vinegar, tomato paste, and cayenne pepper. Garnished with fresh parsley and flaky sea salt, this simple and satisfying Spanish side is surprisingly spicy and a superb sizzling selection to serve with supper.

sweet potato burgers with chipotle mayo: Happy Wednesday! Thanks to everyone for tuning in over the weekend and following our adventures at the Netflix after-party for the Golden Globes! We’ve just about recovered and these burgers have helped nurse us back to reality. Here, sweet potatoes are roasted in the oven until caramelized and bubbly. Combined with smooth cannellini beans, and seasoned with fresh cilantro, chopped scallions, parmesan cheese and spiced with garlic, ginger, smoked paprika, and cumin, the tanginess from the lime juice and zest also colors this bright orange mixture with lively speckles of jade green. Formed into patties and coated in panko bread crumbs, they are sautéed until deeply browned and delightfully crispy, then topped with an addicting homemade chipotle mayo for a smoky spicy kick. Add the traditional lettuce, tomato, onions, and slices of avocado, and let the sweet potato burger revolution begin.

Our jumbo-sized contributions, adapted from Sarah Kieffer’s @sarah_kieffer new release, “The Vanilla Bean Baking Book” are a chocolate lover’s dream. Using a whopping eighty-five grams of dough per cookie, one entire batch makes ten gigantic servings. Hot from the oven, they come out airy and puffy, but within minutes, they cool and flatten into the chewiest cookie imaginable, like a condensed brownie with seductively crispy edges and deep chocolatey flavor. Cookies may not be the answer to every problem in the world right now, but these rich and chewy, crisp and chocolatey treats are certainly a positive step in the right direction.
