I’m going to let you all in on a little secret of mine--I will never be that person that meal preps. Don’t get me wrong, if you’re into meal prepping, I think that’s great! But you’ll never catch me on a Sunday whipping up a big batch recipe and dividing it up between five identical containers for the week. Instead, the way that I set myself up for a week of tasty breakfasts, lunches, and dinners is all in the SAUCE! By setting aside some time to whip up a few key condiments, dips and sauces, you’ll have a stash of condiments that will take all your meals to the next level. This way, you’re not locked into the same meal everyday and you can have fun with customizing toasts, salads, bowls, and curries.

The beauty of a homemade pesto is that you can use up all the odds and ends of your fridge and pantry. In the bowl of a food processor, process together whatever fresh herbs or greens, toasted nuts, and salty cheeses that you might have. Toss in a few cloves of garlic, a generous guzzle of olive oil, and few drops of vinegar or lemon juice. BOOM! Now you have a fresh pesto to spread on toast, top off your eggs, stir into pasta, drizzle on sandwiches, or add to grain bowls.

Salad Dressings

If you’re a person that tends to throw a bunch of greens, veggies, cheese, and nuts into a bowl and calling it dinner, then keeping a jar of tasty homemade salad dressing on hand is going to make your meals so much tastier (and quicker to whip up!). Whether you’re more of a Caesar dressing person, citrus vinaigrette, herby dressing, or a tahini-lover, there are plenty of salad dressings that you can make today to get you ahead of the game.

Homemade Jams

Chances are you’ve probably got some frozen fruit or some fresh fruit that's on its way out. Put it to use in a tasty homemade jam. Simply cook down the fruit in a saucepan over medium low heat with some water until it is a jam-like consistency and finish it off with a squeeze of citrus, a drizzle of honey or maple syrup, spices like cinnamon or cardamom, and maybe a splash of vanilla extract. Enjoy your homemade jam with yogurt, on toast, in oatmeal, with biscuits, or in smoothies!

Caramelized Onions

There is nothing that’s going to make your kitchen smell better than some sweet caramelized onions. Slice up a few yellow onions and over very low heat, start cooking them down in a large skillet or Dutch oven. Every 10 minutes or so, add some chicken or vegetable broth to the onions to help them cook down. Low and slow is the way to go! Once they start deepening in color, toss in a knob of butter for extra richness. When the onions are ultra soft and dark, season them with a squeeze of lemon juice, salt and pepper. Enjoy these on burgers, in salads, on toast, or in sandwiches. If you're up for it, turn it into some French onion soup!

Hummus

The greatest gift that your pantry can give you is hummus! Seriously, all it takes is a few cans of chickpeas, your finest tahini, oil, garlic, and lemons. Throw it all into your food processor and let it whirl until it’s super creamy. It’s helpful to add some of the chickpea liquid to smooth it all out. Throw in whatever spices you like (smoked paprika, cumin, cayenne, etc) and maybe some roasted veggies, if you have. Now you’ve got a tasty snack for the week!
