Homemade Snickers Ice Cream Bars in honor of National Peanut Day!

ingredients

  • 7 ounces full fat canned coconut milk
  • 1/4 cup natural peanut butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Peanut Butter Caramel

ingredients

  • 1/2 cup natural peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/8 teaspoon salt
  • 3 tablespoons full fat coconut milk
  • Peanuts, for topping the caramel

Chocolate Coating

ingredients

  • 6-9 ounces dark or semi-sweet chocolate
  • 1-2 teaspoons coconut oil

Method

  • Step 1

    Add the ice cream ingredients to a high speed blender and blend until creamy. pour the mixture into an 8x5 loaf pan lined with parchment paper and place in the freezer for several hours.

  • Step 2

    After several hours, mix together the peanut butter caramel. once mixed, spread the caramel over the frozen ice cream layer. top with as many peanuts as you like and gently press them into the caramel. place the loaf pan back in the freezer for several more hours.

  • Step 3

    Once frozen remove from the freezer and slice into 8 bars. coat the bars in melted chocolate and place back in the freezer until the chocolate has hardened (i like to add some coconut oil to my chocolate to help it melt smoothly and thin it out a bit).

  • Step 4

    When the chocolate has hardened, remove the bars from the freezer and enjoy (i like to let the bars sit out for several minutes before consuming so the ice cream layer is creamier). store leftovers in the freezer!
