ingredients

  • 2 cups rolled oats
  • 3 ripe bananas, mashed
  • 1 cup almond butter
  • 1/4 cup coconut sugar or maple syrup
  • 1 flax egg (1 tbsp ground flax meal + 3 tbsps of water)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips, plus more to top

Method

  • Step 1

    Preheat oven to 350F and line/grease a 8x8 baking dish with parchment paper or coconut oil.

  • Step 2

    Add the 1 tbsp ground flax mmm meal + 3 tbsps water to a small cup and let sit.

  • Step 3

    Meanwhile, add all the ingredients to a bowl literally (2 cups oats, mashed banana, almond butter, your sweetener of choice, vanilla extract, cinnamon, baking powder and salt).

  • Step 4

    Add the flax egg, combine the entire mixture, then fold in the chocolate chips, and mix once more.

  • Step 5

    Add the mixture to the baking dish, smoothing the top with a spatula. You can add a few more chocolate chips to top.

  • Step 6

    Bake for 25 mins, take out of the oven, let cool, slice and try not to devour them all.
