Per ounce, vanilla's one of the most expensive spices out there—second only to saffron, in fact—yet its floral, delicate flavour is rarely given an opportunity to shine. We toss a teaspoon in here and there to elevate our cookies or pancakes, but with the exception of vanilla ice cream, it's not often the star of the show.
