A Note From Emilie Raffa

Mediterranean food has evolved to be shared by a diverse population including Southern Europe, Eastern Mediterranean and North Africa. Inspired by the sea and surrounding sun-drenched regions, Mediterranean cuisine uses fresh and flavorful ingredients. It emphasizes herbs, vegetables and fruits, but also includes lean protein like seafood, chicken and legumes. You'll also find unprocessed grains and healthy fats like extra virgin olive oil to promote a balanced diet.

Join me as we explore these delicious dishes inspired by the beautiful Mediterranean.

Kale is an ingredient that seems easy to pair with wines (a robust Pinot springs to mind.) But not too fast: Dino Kale tastes and chews vastly different than Baby. Then there's spicing... Look at the role Kale plays in your dish and pick a wine accordingly. If it's a more of a spicy, verdant dish with Dino Kale opt for a Malbec or tannic red. If it's more of an earthy dish, like this mushroom, leak, and cooked kale gorgeousness by @vanillaandbean opt for that softer bottle of Pinot Noir or dry Rosé of Syrah.

Definitely one of my all time fave salads: GREEK SALAD❤️ Recipe below!. Ps No lettuce in real Greek Salads!!!. INGREDIENTS Salad: 3 tomatoes, cut into chunks 4 Lebanese / Persian cucumbers, cut into thick slices ½ small red onion, finely sliced 1 small green capsicum / bell pepper, sliced 250g/8oz feta block, cut into cubes 5.5oz/125g black kalamata olives 1 tsp dried oregano Dressing: 1 garlic clove, minced 1 tsp dried oregano ¼ tsp salt (or ½ tsp Kosher salt) Freshly ground black pepper 3 tbsp red wine vinegar 6 tbsp extra virgin olive oil. DIRECTIONS 1. Shake dressing in jar. 2. Place salad ingredients in a large bowl. Toss with dressing!. Enjoy!! N xx ❤️

I invited some people over for appetizers and rosé the other day and I, because I lack preparation entirely, realized I had no appetizers (loads of rosé though; always loads of rosé). I had some gorgeous fresh peaches from the farmer's market though, and a beautiful sourdough baguette from my favorite local bakery. I created this Peach Balsamic Bruschetta, and let me tell you: this is one of my favorite appetizers ever. It's so fresh, with a rich, sweetly acidic depth from the balsamic. It basically tastes like summer in a bite, and it's a refreshing alternative to more typical tomato bruschetta.
