Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/3 cucumber, grated and drained
  • 1 clove garlic, grated
  • 1/2 lemon, juiced
  • 1 teaspoon dill
  • 1/2 teaspoon salt

  • 2 pounds chicken thighs
  • 1/2 cup Greek yogurt
  • 1/4 cup olive oil
  • 1 lemon, zest and juice
  • 4 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon coriander
  • 1 teaspoon pepper
  • 6 pitas, warmed
  • 2 roma tomatoes, diced for topping
  • 1/2 cucumber, diced for topping
  • 1/4 red onion, diced for topping
  • 1/2 cup crumbled feta, for topping
  • 5 pitas, warmed

  • 1 large onion
  • 2 wooden skewers

Method

To make the tzatziki sauce:

  • Step 1

    Grate the cucumber and place it in a clean kitchen towel. Squeeze out the excess moisture from the cucumber to prevent the sauce from becoming too watery.

  • Step 2

    In a bowl, combine the Greek yogurt, grated cucumber, grated garlic, lemon juice, dill, and salt.

  • Step 3

    Mix the ingredients thoroughly until well combined. Adjust salt and lemon juice to taste, if needed.

  • Step 4

    Refrigerate the tzatziki sauce for at least 30 minutes before serving to allow the flavors to meld.

To prepare the chicken:

  • Step 1

    Slice the chicken thighs in half and place them in a bowl. Add Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, salt, paprika, cumin, oregano, coriander, and pepper. Mix well to coat the chicken evenly. Cover and allow it to marinate for up to 12 hours in the refrigerator.

  • Step 2

    Slice the top and bottom of the onion. Use the thickest part (middle) of the onion. Lay it on a foil-lined sheet pan and push in two wooden skewers. Layer the marinated chicken onto the onion. Bake in a preheated 350°F oven until the internal temperature of the chicken reaches 165°F. Once rested, slice the chicken off the spit.

  • Step 3

    Spread tzatziki sauce on a warmed pita. Add the sliced chicken on top. Top with diced red onion, cucumbers, tomatoes, and crumbled feta. Drizzle more tzatziki sauce on top.

  • Step 4

    Serve immediately with your favorite Mediterranean-inspired toppings.
