- 21/4 cups fresh ricotta
- 11 ounces mixed olives
- 1/2 cup olive oil
- 2 cloves peeled and minced garlic
- Handful fresh thyme
- to season sea salt
Preheat an oven to 180c. Place the ricotta in the center of a baking dish.
In a small bowl add the olives, garlic, thyme & olive oil and mix to combine. Evenly spread the olives around the ricotta & season with salt.
Place in the oven and bake for 45mins at 180c.
Serve warm with crusty bread. Enjoy!
