Baked Ricotta, Olives and Fresh Thyme

  • 21/4 cups fresh ricotta
  • 11 ounces mixed olives
  • 1/2 cup olive oil
  • 2 cloves peeled and minced garlic
  • Handful fresh thyme
  • to season sea salt


  • Step 1

    Preheat an oven to 180c. Place the ricotta in the center of a baking dish.

  • Step 2

    In a small bowl add the olives, garlic, thyme & olive oil and mix to combine. Evenly spread the olives around the ricotta & season with salt.

  • Step 3

    Place in the oven and bake for 45mins at 180c.

  • Step 4

    Serve warm with crusty bread. Enjoy!
