Çilibir is one of my favorite dishes to make for brunch at home – it looks fancy, but is so easy to make! In this version, creamy Greek yogurt is mixed with garlic, then topped with poached eggs, paprika butter, and fresh parsley. 

Note: This recipe serves two. If you are dining solo, simply cut the measurements in half.

ingredients

  • 1 cup Greek yogurt
  • 1 clove minced garlic
  • 4 eggs
  • 2 tablespoons butter
  • 1/2 teaspoon paprika
  • 1 tablespoon chopped fresh parsley

Method

  • Step 1

    Mix the yogurt, garlic, and a generous pinch of salt. Distribute evenly over 2 plates.

  • Step 2

    Bring a pot of water to a gentle simmer and slide in your eggs, simmering about 2 min, so the yolks are still runny. Remove with a slotted spoon and lay on top of the yogurt.

  • Step 3

    Melt the butter in a small saucepan and stir in the paprika, cooking for 2 min until the paprika is very fragrant. Drizzle over the eggs.

  • Step 4

    Sprinkle the parsley over top, finish with salt and freshly cracked black pepper.
