A Note From Christine Carlson

I’m notorious for using copious amounts of garlic in nearly every dish I make. This pungent aromatic dates back to the diets of ancient civilizations worldwide and is still lauded for its many health benefits today. Sharp and spicy when raw, mellow, nutty, and sweet when sautéed or roasted; garlic is an integral ingredient in countless dishes around the globe. Use it in everything from baked goods, soups and stews, pastas, meat dishes, vegetables, dressings and sauces. Are you cooking with enough garlic?! Take a cue from this bold bulb and let it permeate your food and your senses!

Pan-seared Artichokes With Aioli 3 Ways

pan-seared artichoke with an aioli trio: Happy Valentine’s Day everyone! You know what they say: once you pan-sear an artichoke black, you can never go back. We have always steamed our artichokes, but after discovering this method we realized how much more flavor was possible. Simply dressed with fresh-squeezed lemon juice, whole cloves of garlic, a drizzle of oil, and a pinch of flaky sea salt, they are wrapped in foil and baked in the oven till they come out steaming hot, filling your kitchen with the aroma of roasted garlic. And just as you were thinking it doesn’t get better, it actually does: throwing the artichokes on a grill for a few minutes brings an enticing smokiness that you can’t get from the oven alone. And since today is a special day, we decided to create not one, not two, but a trio of sauces for your dipping pleasure. With candles flickering and your favorite tunes playing in the background, this Valentine’s Day will be a night to remember.
