Dough
ingredients
- 5 cups flour
- 3 tablespoons olive oil
- 1 1/2 cups warm water
- 1/2 cup warm milk, optional
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (2 ¼ teaspoons) active dry yeast
- nigella seeds
- sesame seeds

- yogurt

Method
Step 1
Put the flour in a large bowl. Add the dry yeast and combine. Add the warm water (or warm milk), olive oil, salt and sugar. Combine them lightly. On a lightly floured surface, knead the dough by hand softly and slowly. The dough should be soft. Place the smooth dough in another large and clean (not floured) bowl and cover with a damp cloth. Leave it in a warm place for about 2 hours. It'll ferment and rize about double in size.
Step 2
After 2 hours, transfer it to an oven tray that is sprinkled with flour or lined with baking paper. Press the pide loaf flat, about ½ inch thick, and shape into an oval or round. Take a sharp knife dipped in flour and make diagonal cuts in opposite directions to make a diamond pattern. Sprinkle the sesame and nigella seeds evenly over the tops. If desired, brush the surface of pide with yogurt or egg yolk.
Step 3
Bake it in a preheated oven, at 400F (200C), for about 25-30 minutes or until the top becomes golden brown. Remove from oven and set on wire rack to cool.
Step 4
Make a bread bowl by carving out the center and stuff with tomato, pepper sauce, yogurt, cheese, vegetables and eggs. Bake again until stuffing is cooked, about 10-15 minutes.
