Inspired by an appetizer I had at a restaurant recently, I took mine to the next level with some homemade hot honey (shout out to my sister for making it!) and toasted, seasoned pita bread.   • 1/2 cup cottage cheese
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 tablespoon hot honey (store-bought or homemade below)
  • Chopped roasted pistachios, for topping
  • Fresh herbs (such as thyme and sage), for garnish
  • Toasted za’atar pita bread (recipe below)

Feta Dip:

Method

  • Step 1

    In a bowl, combine the crumbled feta, cottage cheese, olive oil, and hot honey.

  • Step 2

    Using an immersion blender, blend the ingredients until the mixture becomes thick, rich, and creamy.

  • Step 3

    Transfer the blended mixture to an oven-safe dish and drizzle a bit of olive oil on top.

  • Step 4

    Preheat the oven's broiler to 500°F.

  • Step 5

    Place the dish in the oven and broil for about 5 minutes or until the cheese starts bubbling and turns lightly brown.

  • Step 6

    Once done, remove the dish from the oven.

  • Step 7

    Top the hot honey-whipped feta dip with chopped roasted pistachios, an additional drizzle of hot honey, and freshly chopped herbs, such as thyme and sage.

  • Step 8

    Serve the dip alongside the toasted za’atar pita bread.

Toasted Za'atar Pita Bread (optional):

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    Cut the pita bread into triangles and place them in a mixing bowl.

  • Step 3

    Toss the pita triangles with olive oil and za'atar seasoning until evenly coated.

  • Step 4

    Spread the seasoned pita triangles on a baking sheet.

  • Step 5

    Bake in the preheated oven for approximately 10 minutes or until they turn golden brown and become fragrant.

Homemade Hot Honey (optional):

  • Step 1

    In a stovetop pot over medium heat, combine 1/2 cup honey and 1 tablespoon of chili flakes.

  • Step 2

    Cook the mixture until the honey begins to bubble, then remove it from the heat.

  • Step 3

    Stir in 1 tablespoon of apple cider vinegar and let it infuse for 5 minutes.

  • Step 4

    Store the hot honey in a glass jar for later use.
