Bite-sized pillows of potato and flour, Gnocchi is basically the Italian version of a dumpling. There is room for improvisation, such as using sweet potato or pumpkin as the base in place of potato, or adding some cheese for flavoring. Simply finished in a pan with butter and sage is delicious, but you can also use it as the starch for a more heartier meal.
