Mac 'n Cheese Gnocchi:
ingredients
- 1 pound gnocchi
- 1 tablespoon unsalted butter
- 1 tablespoon all purpose flour
- 1 1/2 cups whole milk
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
Prepare Garlic Butter:
Method
Step 1
Preheat the oven to 250°F.
Step 2
In an oven-safe dish, combine the garlic cloves, olive oil, and a sprig of rosemary. Cover the dish and roast in the oven for 2 hours until the garlic is soft and fragrant. Remove and allow to cool.
Step 3
In a bowl, combine the softened butter, chopped basil, grated Parmesan, Italian seasoning, and the roasted garlic (squeeze the cloves out of their skins). Mix until well combined. Season with salt and pepper to taste.
Make the Garlic Bread Bowl:
Step 1
Preheat the oven to 400°F.
Step 2
Using a serrated knife, carefully cut the top off the round loaf of bread. Hollow out the center, leaving about a 1-inch border around the edges and bottom to create a bowl.
Step 3
Generously coat the inside and top of the bread with the prepared garlic butter mixture. Place the bread bowl on a baking sheet and bake in the preheated oven for 10-15 minutes or until the bread is crispy and golden. Set aside.
Prepare the Mac and Cheese Gnocchi:
Step 1
In a large pot of boiling salted water, cook the gnocchi according to the package instructions until they start to float, usually about 3-5 minutes. Reserve about 1/2 cup of the pasta water before draining the gnocchi.
Step 2
In a separate pan over medium heat, melt 1 tablespoon of butter. Add the all-purpose flour and stir until the flour is fully coated, about 1 minute
Step 3
Pour in the whole milk and continue stirring for 3-4 minutes until the mixture slightly thickens.
Step 4
Reduce the heat to low and add the shredded cheddar and mozzarella cheeses, stirring continuously until the cheese is melted and the sauce is smooth.
Step 5
Season the sauce with salt, pepper, garlic powder, onion powder, and paprika. Stir until well combined.
Step 6
Add the cooked gnocchi to the cheese sauce, gently coating the gnocchi with the sauce. If the sauce is too thick, add a little of the reserved pasta water to adjust the consistency.
Step 7
Carefully spoon the mac 'n cheese gnocchi into the prepared garlic bread bowl.
Step 8
Garnish with additional grated cheese or chopped herbs if desired.
