ingredients

  • 2 tablespoon olive oil
  • 1/2 red onion, finely chopped
  • 1 fennel bulb, core removed and finely chopped
  • 1 garlic clove, minced
  • 2 (14.5 oz) can Muir Glen Diced Tomatoes
  • 1 tablespoon fennel seeds
  • 2 teaspoon crushed red pepper flakes
  • 1 teaspoon parsley
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 lb pasta of choice, cooked al dente

Method

  • Step 1

    In a large saucepan, add olive oil over medium heat.

  • Step 2

    Once hot, add onion and fennel, sauteeing until tender, about 5-7 minutes.

  • Step 3

    Add garlic and saute, cooking for 1 minute, just until fragrant.

  • Step 4

    Add tomatoes and spices, stir well and cover.

  • Step 5

    Reduce heat to low and let simmer for 20 minutes.

  • Step 6

    Remove lid, stir and add cooked pasta to pan, stirring to coat. Serve with fresh basil or grated parmesan, if desired.
