2 medium eggplants
1 head of purple cauliflower
1 large bag of carrots
1 pomegranate
3 lemons
1/4 cup fresh basil
1 onion
1 head of garlic
1 (15-oz.) can kidney beans
4 burger buns
1 tomato
1 red onion
1 head of romaine lettuce
4 cups arugula
1/2 cup watermelon radish slices
1/2 cup fresh figs
1 (15-oz.) can chickpeas
4 ripe avocados
2 raw sushi nori sheets
1 cup sprouted brown rice or quinoa
1 red cabbage
1/2 cup hemp hearts
Fresh ginger
1 pound spaghetti, or other pasta
1 medium yellow onion
2 tablespoons red wine (can be substituted by balsamic or red wine vinegar)
2 (28-oz.) cans of chopped tomatoes
1 medium head of cauliflower, cut into small florets
7 limes
1 (15-oz.) can pinto beans
1 pkg corn tortillas
Cilantro
Salsa
2 young coconuts
1 can coconut milk
1/2 cup coconut water, from young coconuts
3 tablespoons dried coconut

If you like, you can also make this with your favorite grain instead of cauliflower rice, but we love this veggie-heavy eggplant boat dinner, if we're being completely honest.
Not all veggie burgers are created equally, and these kidney bean patties are in a league of their own. Use your favorite bean instead if you want to mix it up.
Feedfeed Tip The oats add a great, fibrous texture to the patties while helping to hold them together, but you could also use a nut flour or whole wheat flour to help bind the patties, as well.
Since your local farmers' market is probably bursting with all of the fresh greens, it makes sense to have a hearty salad for dinner. The figs add a sweetness that balances out the rest of this filling dinner.
If you've got a handful of heirloom tomatoes, you can easily substitute them for the canned tomatoes. They'll be plenty juicy for this rich tomato sauce.
Slide into the weekend with a fun taco night. This roasted cauliflower is packed with rich flavor, which is perfectly balanced out by the fresh, light cabbage slaw.
