- 1 onion
- 1 clove of garlic
- 1 (15-oz.) can kidney beans, drained and rinsed
- 1 carrot, grated
- 1/ 3 cup oats
- 2 tablespoons psyllium husks, optional
- 1 teaspoon mustard
- 1 teaspoon tomato paste
- minced meat spice mix
- 4 hamburger buns
- Lettuce, tomato, vegan cheese, and onion, for serving (if desired)
Fry the onion and garlic in a medium saucepan. Rinse and mash the can of kidney beans. Mix in the grated carrot, 1/3 cup oats, the fried onion and garlic, 2 tbsp psyllium husks, salt, pepper, 1 tsp mustard, 1 tsp tomato paste and some 'minced meat' spice mix. Shape into patties and cook burgers until browned on outside. Serve with buns and desired toppings.
