Today I planted the first two plants in our garden, my Mum got me Thyme and Parsley. Do you like gardening? I grew up in a house with a giant garden with endless possibilities to play. We had several fruit trees, a herb garden and lots of veggies growing everywhere. I always loved to eat stuff from our own garden. Now I'm having my very first own garden, which is super shady unfortunately. Any tips for veggies that grow in (very) shady places. Nevertheless I love spending my time outside sooo much, especially now that all plants start to bloom. For dinner Daniel and I had the leftovers of yesterday's pasta salad along with one of these bean burgers on homemade buns. -@endorphilia

ingredients

  • 1 onion
  • 1 clove of garlic
  • 1 (15-oz.) can kidney beans, drained and rinsed
  • 1 carrot, grated
  • 1/3 cup oats
  • 2 tablespoons psyllium husks, optional
  • 1 teaspoon mustard
  • 1 teaspoon tomato paste
  • minced meat spice mix
  • 4 hamburger buns
  • Lettuce, tomato, vegan cheese, and onion, for serving (if desired)

Method

  • Step 1

    Fry the onion and garlic in a medium saucepan. Rinse and mash the can of kidney beans. Mix in the grated carrot, 1/3 cup oats, the fried onion and garlic, 2 tbsp psyllium husks, salt, pepper, 1 tsp mustard, 1 tsp tomato paste and some 'minced meat' spice mix. Shape into patties and cook burgers until browned on outside. Serve with buns and desired toppings.
