Creamy Cajun Prawns Over Rice

Cajun seasoned prawns are served over vegan-friendly fried rice with a creamy coconut sauce. Fried rice is blended with peas, asparagus, and leeks. This dinner is simple but elegant, and it will impress all of your guests.

ingredients
Prawns:
- 500 grams King prawns
- 1 tablespoon Cajun seasoning, divided
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 250 milliliters coconut cream
ingredients
Stir-fried rice:
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 leek, chopped
- 3 garlic cloves, minced
- 200 grams frozen peas
- 250 grams asparagus, rough ends removed and chopped
- Salt and freshly ground pepper, to taste
- 2 tablespoons coconut aminos
- 2 cups cooked brown rice
Method
To make the prawns:
Step 1
In a bowl toss together prawns and half of the Cajun seasoning.
Step 2
Heat oil in a skillet. Pan fry on both sides until golden brown. Remove from pan and set aside.
Step 3
In the same pan add onions and cook until fragrant. Add in coconut cream and bring to a simmer. Add in remaining Cajun seasoning Once sauce slightly thickens return prawns back to pan and set aside.
To make the fried rice:
Step 1
In a non-stick pan heat olive oil. Add onion, leeks, garlic, peas, and asparagus. Season well with salt and pepper. Add in coconut aminos and mix well.
Step 2
Mix in cooked brown rice. Serve immediately with prawns and sauce over top.
