We may be a little anxious for Spring sunshine, as you might be able to guess from this week's menu. We're pulling out the asparagus, spring strawberries & peas to whip up bright, cheerful & easy meals for the week ahead.

THE MENU
Sunday Breaded Lemon Pepper Chicken
Monday Roasted Asparagus, Avocado, and Egg Toast
Tuesday Shaved Asparagus and Strawberry Salad with Grilled Cheese Croutons
Wednesday Green Pea Broccoli Soup
Thursday Cream Cheese Sandwich with Strawberries and Pea Tendrils
Friday Red Wine Pasta
Weekend Bonus Pinot Noir Soaked Chocolate Strawberries

THE GROCERY LIST
(the must-haves!)

4 chicken breasts 
6 lemons
Fresh parsley
2 avocados
2 bunches asparagus
2 lbs fresh strawberries
4 oz Herbed goat cheese 
Crumbled feta
Slivered almonds
Greek yogurt
5 oz mixed greens
1 medium head of broccoli
Frozen peas
Vegetable stock
Onion
Garlic
Cream cheese
Pea tendrils (or arugula)
1 (750 ml) bottle light red wine, such as Beaujolais 
1 pound spaghetti or other pasta
Fresh basil
Pine nuts
Dark chocolate chips
 

PANTRY ESSENTIALS
(things we assume you have,
but if not, stock up!)

Olive OIl
Flour
Salt and Pepper
Garlic Powder
Sliced sourdough bread (or sandwich bread of choice)
Eggs
Honey
Apple cider vinegar
Poppy seeds
Milk
Coconut oil

OPTIONAL FLAVOR ENHANCERS
(Things that would be nice to add to the recipes we chose, but not essential)

Heavy cream
Pinot Noir Wine, for soaking strawberries

This pasta cooks in a whole bottle of wine! Don't feel like you need to spend a lot on the wine, and if you prefer your could use chicken stock instead.
