Take advantage of young pea sprouts in early Spring! They make a wonderful replacement for spinach and can be sauteed, added to soups, or made into pesto.

serves 2

Ingredients
4 Slices bread
1/4 cup cream cheese
1 cup pea tendrils (or arugula), roughly chopped
1/2 cup strawberries, thinly sliced

Directions
Spread a thin layer of cream cheese on each slice of bread. Add pea tentrils (or green of choice) and strawberries to one slice of bread, then top with remaining bread.

Wrapping the sandwich in wax paper makes it easier to slice and present as the contents are kept in tact.
